Talia Trovato

Chef

Born and raised on the east side of Cleveland, Talia grew up with Italian family traditions. After studying at Notre Dame Cathedral Latin (Chardon) she was accepted into Ursuline College (Pepper Pike) where she graduated in 2016 with honors, and received a Bachelor’s in Arts - majoring in Biology. While working in a molecular medicine laboratory at the Cleveland Clinic, Talia had an increased interest and discovered her passion for cooking, the science of food, and the subject of gastronomy. Talia continued her education by attending culinary school, where she received an advanced degree in Culinary Arts in 2019.

Talia left Ohio to work in the most prestigious restaurant on Walt Disney Property, the AAA’s Five Diamond and Forbes Five-Star award winning restaurant, Victoria & Albert’s at Disney’s Grand Floridian Resort and Spa; where she was introduced to an entirely new class of dining, the chance to work with the finest ingredients, and the exposure to meet a number of talented chefs – Chef Hedy Pastrán in particular.

Although Florida was an unforgettable opportunity, they say “There is no Place like Home”. With the dream of one day owning their own restaurant, the Disney Duo settled in Chesterland, Ohio where they opened the doors to their premier, white table-cloth restaurant, Coppia.

As a member of the United States Bartenders Guild (USBG), Talia leads the development of new cocktails, mixology, and spirits at the Coppia Bar; ensuring that the flavors of the drinks pair and compliment the flavors of the seasonally changing menu.



Hedy Trovato

Chef/Sommelier

Venezuelan born, raised in Puerto Rico and Florida. Hedy has had an affinity for the Culinary Arts from early on in her life, she completed a culinary program throughout her high school and right after graduation she was accepted into the Orlando Culinary Academy - Le Cordon Bleu. She concluded her last year of culinary school with an externship at Les Chefs de France in the World Showcase Pavilion at Epcot, Walt Disney World. 

With much enthusiasm and desire to keep learning, she took a position at the award winning AAA’s Five Diamond, Forbes Five Star Restaurant, Victoria & Albert’s at Disney’s flagship resort, The Grand Floridian Resort & Spa. After a 5 year endeavor there, Hedy moved to another 5 year venture at Tavistock’s Isleworth Golf & Country Club leading their fine dining restaurant, The Windermere Room.

After many years of working for, and along side numerous talented Chefs, Hedy’s mentor gave her the opportunity to return to Disney Resorts to join a team of Signature Restaurant Chefs which is where she met Chef Talia.

Shortly after, they decided to move to Ohio and take the food scene by surprise by opening their premier restaurant, Coppia where globally inspired cuisine meets fine dining.

Hedy also focuses on the wine pairing at Coppia Restaurant. She partners with wine makers and producers to make certain that the perfect pairing for each course is available for diverse palates.
